statia has made me appreciate many things i took for granted at home, and one of the big ones is CHICKEN!!! most of the yummy meals i made at home seemed to center around chicken, so it's been interesting to take that aspect out of meal planning as you just never know about the meat around here! we were told early on that some stores turn the fridges/freezers off at night to save electricity, and even when you take a risk and get some "good" chicken, it's tough and just not the same.
this though........mmmmmmmmmm. on saturdays, there are some people who ship legitimate chicken over from st. maarten and bbq it up, and it's sooooo good! we call it chicken day, and it's pretty freakin awesome! the kids play at the park while.....
we get our chicken on! they also have johnny cakes, and it's just a pretty yummy happy chicken day when saturday rolls around!
